We like tender, flavorful chicken thighs, but chicken breast will work too.

If you dont have hot paprika, use sweet paprika along with chili powder or cayenne pepper to taste.
Its rich and cheesy, with plenty of broccoli and shredded carrot for added nutrition and color.
Enjoy with crusty bread for dunking.

The addition of tomato sauce helps thicken and flavor the broth.
Refrigerating the meat mixture for at least 15 minutes before shaping it into meatballs helps them keep their shape.
If you have a small ice cream or cookie scoop, you could use it to portion the meatballs.

This soup has notes of ginger, garlic, coriander and chiles from prepared red curry paste.
Allowing the curry paste to cook a bit in the oil first gives the soup a richer flavor.
Creamy coconut milk helps balance the heat.
Serve with sticky rice or noodles on the side.
Serve with a salad or a grilled cheese for dunking.
