Shishito peppers get topped with cotija cheese and chopped peanuts for a healthy veggie side.
Cook at 400F, flipping once, until blistered and tender, 4 to 5 minutes.
Meanwhile, whisk lime juice, honey and Sriracha to taste in a medium bowl.

Add the peppers to the lime juice mixture; toss to coat.
Top with cotija, peanuts and lime zest.
Sprinkle with salt, if desired.
