Quick pickled onions are a pretty and tasty topping, and chipotle mayo seals the deal.
Combine onion, vinegar, water, sugar and 1/4 teaspoon salt in a small saucepan.
Bring to a boil.
Remove from heat and let stand for at least 15 minutes.
Bake until an instant-read thermometer registers 165 degrees F, about 20 minutes.
Meanwhile, stir together mayonnaise and the remaining 1/4 teaspoon ground chipotle in a small bowl.
To assemble, cut a thin slice from the bottom half of each avocado to make it more stable.
Sprinkle each slider with sesame seeds.
