In this recipe, black-eyed peas get a wonderful smoky flavor from slab bacon.

Place the peas in a large bowl with cold water to cover them by 2 inches.

Soak for at least 4 hours or overnight.

Fry bacon in a large pot over medium heat until the fat is rendered.

Add water, thyme, salt, pepper and the soaked peas; bring to a boil.

Serve hot with cornbread, rice or both.

Cover and refrigerate for up to 5 days.
