Bake, stirring once, until the coconut is light brown, 6 to 8 minutes.
Cool in the pan on a wire rack.
Meanwhile, combine dates and boiling water in a small heatproof bowl.
Let stand until softened, about 5 minutes.
Transfer the dates to a food processor and process until chopped.
Pulse until the mixture clings together.
Stir in chocolate, if using.
Shape into 1 1/2-inch balls to make 12 breakfast bites.
