Transfer to a plate.
Add the remaining 1 tablespoon oil, onion and water to the pan.

Cook, stirring, until mostly softened, about 3 minutes.
Add spinach; cook, stirring, until wilted, about 1 minute.
Return the chicken and any accumulated juices to the pan and turn to coat.
