Bring to a boil and remove from heat.
Let steep for about 10 minutes.
Strain into a large bowl, pressing on the leaves to extract all the liquid.
(You should have about 3 tablespoons liquid after straining.)
Add 6 peaches (or nectarines) and 1/3 cup almonds; gently toss to combine.
Serve the salad topped with 3/4 cup feta (or goat cheese).
We’d use a skillet for this recipe, which calls for 1/3 cup almonds.
Heat a dry skillet over medium-high, and when the skillet is hot, add the almonds.
Toasting is quick (11 to 12 minutes).
Note: The smaller pieces will cook faster, so keep an eye on them.
The longer the salad is allowed to sit, the more quickly the greens will wilt.
