Cut carrots crosswise into 1 1/2-inch pieces.
Cut each piece in half lengthwise; transfer to a medium bowl.
Add Parmesan, oil, garlic, onion powder and salt to the carrots; toss well to coat.

Arrange the carrots, cut-sides down, in a single layer on a large rimmed baking sheet.
Bake until the carrots are tender and the cheese is golden brown and crispy, 25 to 30 minutes.
Transfer the carrots to a serving dish.
