Serve this easy and flavorful potato salad alongside fried fish or just about any main course.
Drain the potatoes and set aside until completely cool.
Peel the cooled potatoes and cut into 1/2-inch pieces.
Transfer to a large bowl.
Add celery, onion, eggs and relish to the potatoes; mix gently to combine.
Add salt and pepper; mix well.
Cover with plastic wrap and refrigerate until well chilled, at least 2 hours and up to 3 days.
Taste and adjust the seasoning, if desired, before serving chilled.
Refrigerate potato salad, covered, for up to 3 days.
