Place the steaks on the preheated baking sheet.

Brush both sides with 1 tablespoon oil and sprinkle with 14 teaspoon each salt and pepper.
Roast, flipping once, until the broccoli is tender-crisp and charred in spots, 25 to 30 minutes.
Remove from the oven.

Mound 3 tablespoons cheese in the center of each broccoli steak.
Roast until the cheese is melted, 1 to 2 minutes.
Top each steak with 1 tablespoon bacon, 1 tablespoon scallions and 1 teaspoon sour cream.
