This salmon fried rice is a great way to use leftover salmon.

Using frozen vegetables keeps prep work to a minimum.

Sriracha gives this quick stir-fry a nice touch of heat.

Salmon Fried Rice

Heat oil in a large wok or skillet over medium-high heat.

Stir in rice; cook, stirring often, until the rice is lightly browned, about 4 minutes.

Stir cilantro into the fried rice and toss well.

Divide among 4 plates.

Garnish with the reserved dark green scallion slices and with additional Sriracha and cilantro, if desired.
