Spread bread on a large rimmed baking sheet and bake until lightly toasted, about 15 minutes.

Meanwhile, heat oil in a small skillet over medium heat.

Remove with a slotted spoon to a medium bowl.

Add celery and onion.

Cook, stirring, until softened, about 5 minutes.

Add apple and cook, stirring, until tender, about 5 minutes more.

Add the toasted bread, herbs and salt to the bowl.

Drizzle broth and butter over the mixture and toss gently until evenly moistened.

Place on a baking sheet and bake until heated through, about 30 minutes.

If you want a crisp top, uncover the ramekins for the last 15 minutes of baking.
