They make an excellent appetizer for holiday entertaining.
Coat a large rimmed baking sheet with cooking spray.

Whisk sugar, cinnamon and salt together in a large bowl.
Place egg white and vanilla in a medium bowl and whisk until foamy.
Add almonds to the egg-white mixture and stir to coat.

Add the almonds to the sugar mixture and stir to coat well.
Spread the coated almonds evenly on the prepared baking sheet.
Bake for 30 minutes.

Let cool to room temperature before serving or storing.
