Add zucchini and squash; cook, stirring occasionally, until lightly charred, about 2 minutes.
Add tomatoes and cook, stirring constantly, until they start to burst, about 1 minute.
Transfer the vegetables to a large bowl.

Add 1 tablespoon oil and shrimp to the pan; cook, stirring, for 1 minute.
Transfer the shrimp to the bowl with the vegetables.
Add the remaining 1 tablespoon oil and soba noodles.
Cook, stirring occasionally, until hot, about 1 minute.
Add the vegetables, shrimp, teriyaki sauce and soy sauce.
Cook, stirring, until hot, about 2 minutes.
Serve the noodles garnished with scallions and sesame seeds, if desired.
